In honour of Schladerer, Max and Sebastian named their vermouth after Sixtus Balthasar Schladerer, the founder of Schladerer - “Belsazar“ is the basic form of the name Balthasar. One for seasoned vermouth drinkers looking to break the mould, Casa Mariol combines a macabeu wine base and macerated local botanicals, before ageing in a traditional solera system for 6 months. The flavour profile is pleasantly dry, with a lively hit of fruity floral notes (think: rose, vanilla and baked apple), while wormwood provides the bittersweet balance we’re looking for in a quality vermouth. Bartender Richard Hiddleston’s concoction consists of 30ml rose vermouth (Belsazar, for example), 10ml lime sherbet (made from the zest of 4 limes, 150ml lime juice and 300g caster sugar), 20ml vodka, 10ml fresh lime juice, topped up with ordinary lager. Deeply herbaceous with impressive acidity and a rounded mouthfeel; do it justice and savour over ice.
Then fill the empty neck of the bottle with Aperol and a squeeze of lemon juice, or even just a pushed-in lemon wedge. Belsazar Rose: Bittersweet and summery, offering a harmonious blend of pink grapefruit, Seville orange and orange blossom with a raspberry and redcurrant finish. Working with Schladerer, a very well-known distillery in the Black Forest that has produced fruit brandies since 1844, they developed the recipe, identifying the right macerates and perfecting the finishing touches. Belsazar Rose vermouth is an innovative take on the standard vermouth, combining the best characteristics of Red vermouth and White vermouth.Ingredients: 50ml of Belsazar Rosé; 100ml of quality tonic water (we recommend Fever-Tree Indian Tonic Water); a slice of grapefruit.
Sweet top-notes of apricot and plum, followed by plenty of traditional bitter notes of wormwood and cinchona lasting on the finish.Belsazar Rosé is made with a Pinot Noir Rosé wine, a new to the world development in the field of Vermouth. THIS IS WHEN THE VERMOUTH STARTS TO TAKE SHAPE - AND ALL IT TAKES IS A DELICATE COMBINATION OF SKILL, TIME AND TEMPERATURE. Distilled in London, this is an excellent example of a modern sweet vermouth – perhaps unsurprising, given the number of awards its racked up in recent years.
