I make a lot of gifts to give to friends for the holidays and the one they always clamor for is my liqueur du jour; people LOVE homemade gifts and this one would be extra special! Some recipes called for vodka only and some called for vodka and brandy. Some called for using red wine, which would give it a deep color, but I thought it would add too much of it's own flavor. Hmm as for the fermentation, it may be that something got in there when you were bottling it or pouring it to drink! I’m afraid I’m not an expert on preserving food but I’d recommend decanting it temporarily and re-sterilising the bottle. Hope that helps a little!

When I decided to make a homemade version, I saw two distinct different variations in the recipes I found. I chose wine but the other uses brandy and vodka. Serious Eats has this recipe; I’ve not tried it but I think it sounds good too. What ABV is crème de mûre? It is 17% ABV (alcohol by volume), so it has a relatively low alcohol level, similar to most sweet liqueurs. I don’t actually can mine as I don’t have the equipment or knowledge to do so. I sterilise the bottles so it keeps for a long time unopened, it then lasts a couple of months in the fridge after opening. Pour into a large saucepan and add the sugar. Bring to a gentle simmer on a medium heat, stirring until the sugar is dissolved. Simmer for 8 minutes.Pour the Creme De Mure into a tumbler and fill with crushed ice. Pour the gin mixture over the top of the ice. There’s no reason you can’t leave them for little longer, although after a certain time leaving them longer will add no real benefit.
