I eat whatever — just no animals! Although if I have a big event coming up I’ll add tofu to meals for protein and I take Huel protein powder before and after.Place the flour in a small bowl and season with salt and pepper. Toss the frozen chocolate bars in the flour to lightly coat, then remove and set aside on a plate. Olive oil— I used olive oil to saute the veggies because I always have a bottle in the kitchen, but canola oil or any other vegetable oil would work.
Cajun seasoning— I added two full tablespoons of Cajun seasoning, and that resulted in a medium-spiced dish. The spiciness level of the Cajun seasoning may vary from one brand to another.I used plant-based sausages to make this meatless dirty rice, and the result was amazingly flavorful and tasty. This vegan dirty rice has a great mix of proteins, carbs and veggies for a balanced meal the entire family will love. Stir in the garlic, cook for another minute, and then add the Cajun seasoning. Stir to combine, then add the rice and toast it for 1 minute, stirring often. You can freeze this vegan dirty rice for up to 1 month. Thaw it in the fridge overnight before reheating.

The star of TV series Dirty Vegan Matt Pritchard gives an insight into his journey from prankster to plant lover.
I started in 2009. I’d been part of Dirty Sanchez for years — travelling, touring, drinking, etc and it takes it out of you. I’d run the Cardiff half marathon at 15 and wondered if I could do it again. So I did it, and then I did a full marathon and then I had the bug. I ran the country — 900 miles in 30 days. I did an Ironman, then I did 30 Ironmans in 30 days. All on a vegan diet. What do you eat to support your training? Bell peppers— A mix of red and green bell peppers adds extra vibrancy to this Cajun dirty rice, but you can definitely use whatever colors you may have on hand. Spoon into wide, shallow bowls, top with the crispy fried onions to add some texture, then garnish with the finely chopped chives. If you want some more spice, garnish with extra chilli flakes, then enjoy your fragrant dirty rice.
